Vegan Broccoli Soup Recipe

Ingredients
1 head broccoli
1 yellow onion
1 tablespoon vegan butter
3 cups vegetable broth
½ cup non-dairy cream
Directions
Separate the broccoli florets from their stalks and set florets aside.
Dice the yellow onion.
Place vegan butter and the diced onion into a pot, turn the heat up to medium-high and sauté for 1 minute.
Add broccoli florets and cook for a further 2 minutes, then add broth.
Cook on low-medium heat for 20 minutes with the lid on, stirring halfway.
After 20 minutes, pour into a blender along with the non-dairy cream, and blend on high for 10 seconds.
Pour the servings into individual bowls and garnish with optional chopped parsley.
