Healthy Pumpkin Muffins Recipe

Ingredients
2 tablespoons ground flaxseed
5 tablespoons water
1 ¾ cups flour
1 ½ cup sugar
1 teaspoon baking soda
2 teaspoons cinnamon
¼ teaspoon ground cloves
½ teaspoon ground nutmeg
1 (15-ounce) can pumpkin puree
½ cup melted coconut oil
Directions
Preheat oven to 375 F. Spray muffin tin with nonstick cooking spray.
In a small bowl, add ground flaxseed and water and stir well.
Allow to sit for about 5 minutes, at which point the mixture will be gelatinous in texture.
In a large bowl, use a whisk to combine the flour, sugar, baking soda, cinnamon, cloves, and nutmeg.
Transfer the flaxseed egg mixture to another large bowl, add the pumpkin puree and the coconut oil, and stir to combine.
Add the wet ingredients to the dry ingredients, and stir well to combine thoroughly into a batter.
Scoop evenly into your muffin tin, and bake for 25 minutes.
Serve and enjoy.
