1/3 cup organic oats + 1 tablespoon for topping the muffins
Directions
Preheat oven to 325 degrees F.
In a small bowl, combine the ground flaxseed with the water. Let it sit for 10 minutes until it forms a gel substance.
In a large bowl, add the oil and maple syrup and stir with a whisk to combine well. Add the flax mixture, the mashed bananas, milk, baking soda, cinnamon, vanilla, and salt. Stir well.
Now add the flour and oats to the bowl and stir to combine.
Line a muffin tin with parchment paper cups and distribute batter evenly into the 12 cups. Sprinkle some dry oats on top of each muffin.
Bake for 22 to 25 minutes or until a toothpick comes out clean. Serve.
