Gather the ingredients for your keto cloud bread
Did we mention that another great part of this keto cloud bread is that it requires just a few ingredients? Maybe we have, but it's definitely worth repeating. The main ingredient in the recipe is eggs. You will also need some cream cheese, cream of tartar, and sea salt.
That's right, only four total ingredients to make actual bread, who knew? Hopefully, you have a few items lying around your house already. If you don't, a quick trip to the store is in order. Once you have everything placed in front of you, it's time to begin.
Preheat your oven and prep the bread
Before you start anything else, set your oven to 300 degrees Fahrenheit because this is the temperature that your bread will bake at. It's always best to pre-heat the oven in advance so it's ready to go and there's no extra waiting time.
Next, get out two bowls and the eggs. Separate the yolks from the egg whites, placing the egg yolks in one bowl and the egg whites in another. Next, toss in the cream cheese with the egg yolk, and blend using a stand mixer. Make sure your cream cheese is at room temperature so it's easier to mix with the other ingredients.
Mix the egg whites
Now it's time to add a little more to the egg white bowl. Dump in the cream of tartar and salt on top of the mixture you already have. Be sure to beat the egg whites with everything else until stiff white peaks form.
Then, make a meringue by folding the egg yolk mixture into the egg whites. It should start looking a whole lot prettier, now. Set the bowl aside because you will need it in a second. Wasn't that easy? Only one more step until you get to enjoy your cloud bread.
Prep and bake the keto cloud bread
Take out a sheet tray and line it with parchment paper. Parchment paper is a great alternative to non-stick spray, and that way, you don't even need to clean the baking sheet, as the parchment paper will catch all the residue. It also to ensures the bread doesn't stick to the tray.
Get out a spoon and scoop out eight sections of batter onto the tray. This process should be similar to what you do when you're making cookies. Next, go ahead and pop the bread in the oven. Set your timer for 25 to 30 minutes, and bake until they're golden brown.
Serve your keto cloud bread
Once the timer goes off, you can take the bread out of the oven using oven mitts. The bread will be really hot when it comes out of the oven, so be sure to let it cool off just a bit before serving. When it's finished, the bread should look like little discs.
As for serving? "I like using these as a low-carb bread option for sandwiches," Epstein shares. If you have leftovers, they will be good for at least a week as long as you store them in an airtight container. Now it's time to enjoy! We hope you love this bread as much as we do.
