Easy Tofu Scramble Recipe

Gather the ingredients

First, you need to make sure that you have all the ingredients needed for the dish. Luckily. there are only nine items that go into the recipe, keeping it affordable and easy. All that is required is olive oil, a diced red onion, garlic, extra firm tofu, and nutritional yeast. In addition, the recipe calls for a few spices, including ground turmeric, onion powder, salt, pepper, and cilantro to garnish. Hopefully, you'll already have several of those in your spice cabinet, saving you even more. 

Once you have all the items needed, you can get the cooking party started. Don't worry, it's super easy! 

Begin to cook your tofu scramble

First, find a medium-sized skillet you can cook your tofu scramble in. Then, turn your burner to medium heat and add olive oil to the skillet. Wait for the oil to heat up, and then it should start to sizzle. Once it starts to crackle, toss in the diced onion and the garlic to cook. By now, your kitchen should smell pretty amazing.

Wait until the onion turns translucent, which will take about five minutes over medium heat. Once the onion is good to go, move onto the next step.

Add the tofu

Now it's time for the star ingredient to make its way into the skillet. Add the tofu on top of the onion and garlic. Since it usually comes in a big block, you'll want to break it up with a wooden spoon. This will make it look more like scrambled eggs than tofu. 

Cook the tofu with the onions and garlic for about five minutes, allowing the tofu to cook thoroughly before adding the spices. Continue to stir the mixture as the tofu cooks so that nothing sticks to the bottom of the pan. We're getting closer, folks! 

Add the spices

Once the tofu cooks for about five minutes, it's time to add in the rest of the ingredients. This will also give the plain tofu a little bit of flavor and color. Throw in the nutritional yeast, turmeric, onion powder, salt, and pepper. When you have all of those items added, you can stir everything to combine. 

Cook over medium heat for an additional five minutes or so, making sure to give it a stir from time to time. Then you can remove the skillet from the stove. The good news is that it's almost ready to enjoy. 

Serve your tofu scramble for breakfast

Once you finish cooking the tofu, it's time to serve. Yep, that's definitely the best part of the recipe. Feel free to use either a plate or a bowl for serving. You can add cilantro on top for garnish. 

There are several items that pair well with the breakfast dish, including your favorite type of toast. Carli also suggests serving the tofu scramble with "some sautéed greens like spinach or kale." All around, it's just a healthy breakfast! 

Leftovers are also great! "Leftovers are awesome," Carli shares. "They store in an airtight container in the fridge for up to three days."

Ingredients
  • 1 tablespoon olive oil
  • 1/4 red onion, diced
  • 1 block of extra firm tofu, drained
  • 3 tablespoons nutritional yeast
  • 1 teaspoon ground turmeric
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Cilantro, for garnish
Directions
  1. In a medium skillet over medium heat, add olive oil. Once hot, add onion. Cook until onion is translucent, about 5 minutes.
  2. Add tofu and break up with a wooden spoon. Cook for about 5 minutes.
  3. Add nutritional yeast, turmeric, onion powder, salt and pepper. Stir to combine.
  4. Cook for another 5 minutes. Serve with cilantro for garnish.
