In case you're not familiar with them, Folios cheese wraps are an incredible low-carb product that is made entirely of cheese. You can choose from Jarlsberg, Parmesan, and Cheddar, and you can't go wrong with any of these options. We used Parmesan for this recipe just because that's what we had on hand.

We designed this Costco keto-wrapped chicken burgers recipe around Costco individually packed frozen chicken breasts. We find it's the easiest way to ensure we always have a cheap, healthy protein option on hand that's been processed as little as possible.

If you are using frozen chicken breasts, we recommend defrosting them overnight the day before you are planning on making this recipe. Thawing out chicken will speed up the cooking time. To thaw out the Costco individually packed frozen chicken breasts, just place them on a plate in the fridge overnight. If you're shorter on time, they'll defrost in a couple of hours in the sink or in about 30 minutes if submerged in warm water.

But if you've some fresh chicken breasts instead, that's totally cool, too. Just skip to the next stage.
